1kg ripe tomatoes, chopped
250g onions, peeled and chopped
250g cooking apples, peeled, cored and chopped
250g chipotle peppers
250ml cider vinegar
25g smoked Maldon sea salt
25g hot smoked paprika
250g light muscovado sugar


  1. Place all the ingredients except the sugar in a stainless steel pan and bring to a gentle simmer.
  2. Continue to simmer for two hours, then pass through a mouli.
  3. Return the mixture to the pan with the sugar and continue to cook for around 30 minutes until thickened, stirring regularly.
  4. Decant into sterilized bottles
