INGREDIENTS

DUMPLINGS

  • turkey breast mince  500g
  • ginger 1 tbsp, grated
  •  1/2 red chilli, seeded and finely chopped
  • coriander a handful, finely chopped
  • sesame oil 
  • cornflour 1 tbsp
  • egg white 1
  • white pepper
  • diced whites of spring onion

Broth

  • 1.5 litres light chicken stock 
  • ginger 50g, sliced
  • spring onions 3, greens sliced (whites diced for dumplings)
  • star anise 2
  • ground turmeric 3 tsp
  • baby leaf greens/ spinach 200g, chopped
  • egg noodles 300g

Topping

  • 1 chilli sliced
  • pinch of coriander
  • sesame oil

Method

  1. In a mixing bowl add all the ingredients for dumplings and mix until incorporated
    1. Roll into balls and chill
  2. Put all ingredients for broth in pot and simmer for 20 minutes
  3. strain the broth (KEEP THE LIQUID)
  4. add the strained broth and dumplings back into pot and simmer for 5 minutes
  5. add noodles and cook for 5 minutes or noodles are cooked
  6. mix in greens and scatter coriander and sliced chill to garnish
